This Spanish grape gives wines deep color, low acidity and only moderate alcohol content. In recent years the Ribera del Duero region has been producing wonderful wines featuring this grape; in older, more traditional regions such as Rioja, the grape is blended with others.

Thai Citrus-Grilled Chicken

1 lb boneless chicken, cut into bite size pieces
1/2 tsp black pepper
1 tbsp Thai fish sauce
1/4 cup coconut milk (or more)
1/2 tsp turmeric
2 tsp sugar
Juice of 1 orange
Juice of 1 lime
4 to 6 cloves garlic, chopped
1/2 tbsp ground corriander

Preparation

Place the coriander root, pepper, fish sauce, coconut milk, turmeric, sweetener, citrus, and garlic in a food processor and puree to use as a marinade. Submerge the chicken in the marinade and refrigerate for 2 to 24 hours. Whenever you're ready, grill it over high heat, turning chicken, till you get it right.
