Cream of Tomato-Tofu Soup

Ingredients

1 (28 oz) can Hy-Vee diced tomatoes
1 tbsp Grand Selections olive oil
1 tbsp Hy-Vee minced onion
1 (12.3 oz) package soft tofu
2 (10.5 oz each) cans Hy-Vee condensed tomato soup with 25%-less sodium
Hy-Vee salt, Hy-Vee pepper and Hy-Vee sugar, to taste
chopped fresh basil, for garnish

Preparation

Combine diced tomatoes, olive oil and minced onion in a 2-1/2-quart saucepan. Bring to a simmer over medium-low heat, stirring frequently.

Blend tofu and soup in blender until creamy. Add to saucepan. Heat through. Do not boil.

Season to taste with salt, pepper and sugar. Serve with chopped fresh basil, if desired.
