Thai Chicken Vegetable Rice Dish

Ingredients

12 oz boneless, skinless chicken breast
1 tsp curry powder
2 tbsp canola oil
1 (14.5 oz) can Del Monte™ stewed tomatoes
1/2 (16 ounce) bag Hy-Vee Country Trio frozen vegetables
1/4 tsp crushed red pepper
2 cups hot cooked rice
1/4 cup peanuts, optional

Preparation

Cut chicken into 3/4-inch cubes; toss with curry powder.

Heat oil in large skillet; add chicken. Cook and stir over medium–high heat 3 minutes.

Add undrained tomatoes, vegetables and crushed red pepper. Bring to a boil; reduce heat. Simmer, uncovered, 5 minutes.

Serve over rice and sprinkle with ¼ cup peanuts, if desired.
